In Italia, lo spumante Abissi di Bisson, il Vermentino della Cantina Santa Maria La Palma di Alghero, il Sangiovese e l’Albana della Tenuta del Paguro (Ravenna), Emanuele Kottakis che con Jamin affina Champagne nelle acque di Portofino, ed altri casi all’estero. Parrebbe che il mare sia ideale per affinare il vino, tra temperatura costante e assenza di luce.Ma Wine News scrive che il grande Mattia Vezzola, enologo illustre, la pensi diversamente. “Alcuni di questi prodotti sono molto buoni ed interessanti – spiega a WineNews – ma per l’invecchiamento dei vini è fondamentale l’assenza dalle vibrazioni, oltre alla temperatura costante, e le condizioni ideali, in questo senso, si possono raggiungere solo in cantina. Certo è un percorso affascinate, che si può provare a fare”.
